Thank Crunchy it's Friday!!!

I am so glads it's nearly the weekend and the weatherman said it's going to be sunny!!
For breakfast I had a delicious bowl of porridge topped with raisins and a drizzle of honey, I didn't picture it because I was so wrapped up in the morning routine.
Today I snacked on this bowl of fruit, my fruit and veg count has been a bit on the low side this week, so I wanted improve it. And a 9 Bar.




I was really hungry at lunch time so I had a 2 wholemeal rolls filled with ham, cheese and salad.

Dinner was a recipe I found in a itallian kids cooking book. The meatloaf was load of lean mince mixed up with a egg, oregano, parmesan, onion and then put in a loaf tin and then in the oven for 45 minutes. When it was done I sliced it up and served it with ovenbaked mushrooms, red onion, cherry tomatoes and a few potato wedges. In this picture it doesn't look very appetising, but it really was!! My chicken said it tasted just like a burger.

Yesterdays Menu.....

I really am a breakfast person now, just a few weeks ago I would skip breakfast and then when I felt hungry I would munch on half a pack of custard creams dunked in sugary tea, now I enjoy my breakfast, I even look forward to it!! Also I have gone from have 2 heaped teaspoons of sugar to just a little sweetner and a dash of milk. When my brother visited recently he made me a cuppa the way I used to have it and I just couldn't drink it, it was way too sweet!!
This morning was a yummy bowl of porridge with strawberries, raisins and almonds. I love the way the strawberries warm up on top of the hot oats.



Lunch was a couple of the nuggets leftover from the night before in a wholemeal bap, with salad and a apple.


Dinner was a recipe I found on a blog I have be following since my fitness quest began. Following this blog has really helped me stay on track and given loads of food and exercise ideas.
This meal definately left me satisfied and I actually got the rice just right, I usually make a complete hash of rice!!!

Snacks were a 9 Bar, a banana protein smoothie and a couple of oat cakes with Philidelphia light. Plus plenty of water and a 2 cuppas.

I love chicken nuggets!!!

Woke up feeling refreshed for the first time in what seems like ages because my toddler actually slept through the night, he has been cutting some teeth and has been unsettled in the night. For breakfast I had a yummy bowl of porridge topping with loads of strawberries and a sprinkling of flaked almonds.


Mid morning I snacked on a few dates, dried cherries and whole almonds.

A the most delicious part of the day was my homemade chicken nuggets served with homemade potato wedges and salad, they went down very well with my children and husband.


To make these all I did was chop up some chicken breast fillets, rub some crushed garlic into them, and then roll them in some beaten egg and then into a mixture of breadcrumbs, parmesan and dried parsley, covered them in clingfilm and left them in the fridge for a few hours. When it came to dinner time I put them on a baking tray, drizzled some olive oil on them and put in the oven for 20-25 minutes. They were yummy, but what amazed me the most how nutritionly they are to shop bought nuggets. Look at the difference!!

My nuggets; 29 calories each, 0.8g fat, 4.3g protein, 1.2g carbs.
Birds Eye Chicken Dippers, 42 calories each, 2.4g fat, 2.4g protein, 2.4g carbs.

There is a huge difference in the fat and protein content!! Okay so they took me longer than bunging a box of dippers in the oven, but it is so... worth it to know my kids are getting good food. My husband had them for dinner too and he wouldn't have touched a chicken nugget in the past. The wedges tasted much better then shop bought ones too.

My refreshing post run summer fruit smoothie with a scoop of whey protein.


On the whole it's been a good sun shiney day!!




Should've done this yesterday.........

Well I have decided to make more of an effort with my blog, it was supposed to be to help me in my fitness effort and to log some of the fun times with have together as a family etc etc. I didn't manage to get on the computer last night because family life got in the way, but I have a spare minute or two now to blog away!!
I had my food shopping yesterday and when I was unpacling it, it struck that our food is looking so bright and colourful since I have been making more meals from stratch, it looking so pretty I decided to take a few pics.
Summer fruits to make tasty smoothies, so refreshing after a good workout.
Ok so there are a few biccys etc, my husband just cannot resist a chocolate digestive dunked in his coffee. Some dark choccy for me and some maple syrup for porridge and pancakes.
My favourite foods, cheese and mushrooms!!

Colourful fruit and veg, sweet potatoes are my new favourite.


Dates, walnuts, pecans, ham, 9 Bars (trying these for the first time), peanut butter and some spinach and cherry toms.

Did you notice my Vit C?Ihave been taking it since last autumn on the advice of my GP because my blood reacted strangely to a virus I had. I felt so poorly for weeks I am so worried to stop taking it because I don't want to feel that poorly again, although I am sure my new diet includes plenty of vit C.
Look at the cute chimp and lemurwe saw at Monkey World, this chimp was really showing off for us, much do my kids delight, and the lemersare in a enclosure that the public can walk through, so come up so close, my daughter looked so stunned when this little chappy climbedonto the fence next to us.

Where have I been??

I didn't realise it had been so long since my last post, my life seems to tick by so quickly!! So what have I been upto?? On saturday I did the first part of the Couch to 5K training plan, it was my first run since I was 15, I was a little nervous but when I got started I actually really loved it. I was jogging for 60 secs and then walking for 90 secs for a total of 20 mins, the training plan is about working up gradually. The plan is 8 weeks long which means I should be able to run around 3/4 of the Race for Life at the end of May.

On Easter sunday we had a great day out at Moors Valley Country Park, http://www.moors-valley.co.uk/ We walked for over 2 hours stopping at various obstacles/play areas. I earned some calories for the many treats I had!! A delicious slice of lemon and ginger cheesecake, Chicken legend meal from Macdonalds and a whole large chocolate egg.

Today we are chilling at home, I have done a little work in the garden, although it needs loads more!!

I must start adding some more pictures to my post, especially of the new and tasty foods I am trying!!
